After graduating from the prestigious Conservatoire Supérieur de Musique de Genève, Grégoire studied in New York and enrolled in the Jazz Department of the New School University. Today, he is one of the most sought-after harmonica players in the world. He is often compared to legends such as Toots Thielemans and Stevie Wonder.

Grégoire has been invited to play with many musicians, including : Youssn'Dour, Me' Shell Ndegeocello, Pete Seeger, David Sanborn, George Benson, Cassandra Wilson... In 2003 he was the subject of Swiss filmmaker Frédéric Baillif's award-winning documentary.

In 2005, Grégoire toured with Pat Metheny's band, and received a Grammy for Best Contemporary Jazz Album for the tour album The Way Up. Gregoire also won the Jazz Journalists Association 'Player of the Year Award'. After winning a Grammy, Grégoire embarked on a two-year tour with internationally renowned bassist Marcus Miller and later joined Herbie Hancock's band.

Following his experience with Herbie Hancock, he co-led the jazz trio Gaïa with pianist Frederico Gonzales Peña and percussionist Gene Lake. He participated in the recording of an album "Scenarios" with Andy Milne in 2007. In 2010, Grégoire performed in concert to support the fight against tropical deforestation alongsideElton John and Sting.

In March 2012 Grégoire recorded his first album. This eponymous album features the participation of remarkable artists such as singer Cassandra Wilson, bassist Marcus Miller, guitarist Raul Midón, Mark Kibble and Alvin Chea of the accapella group Take 6, and harmonica legend Toots Thielemans. In 2015, Frances DeBroff invited the Grégoire Maret Trio to the 72 Hours of August in Ainay-le-Vieil.
